Veggie Taquitos

This recipe is vegan, vegetarian and gluten free taquitos. This meat-free taquitos are filled with a hearty veggie mixture, vegetarian refried beans and dairy free shredded cheese that is bursting with flavor.


Veggie Mix- Chop and sauté the veggie mix to put in the taquitos. Its a variety of yummy veggies like zucchini, onions, red peppers, yellow peppers, green peppers, mushrooms, tomatoes and eggplant.

Taco Seasoning– You can make your own with this taco seasoning recipe or you can pick some up at the store! Just keep an eye on the sodium as some store bought brands are very salty.
Refried Beans- Be sure to get vegetarian or fat-free refried beans, as traditional refried beans are often made with lard.
Tortillas– I used gluten free and vegan flour tortillas rather than corn tortillas since they’re sturdier and can handle being tightly rolled. There is also low carb tortillas for anyone who wants it low carb and keto.

Shredded Cheese– I used dairy free/vegan cheese but you can regular Mexican blend of cheeses like Monterey jack and cheddar.

How to make the veggie taquitos

  • Chop up your veggies, add a little oil and sauté until they are tender.
  • Add the taco seasoning the mixture. You may need a little more oil or water for the taco seasoning to dissolve. Stir well and let it cool for a few minutes.
  • Place tortillas on a plate and cover with a damp paper towel. Microwave them for about 30 seconds until warm and pliable.
  • Spread the refried beans in the middle of the tortilla than add the shredded cheese.
  • Top each tortilla with 1/4 cup of veggie mixture. Spread it to about 1 inch of the edge of tortilla and sprinkle with cheese again.
  • Roll up the tortillas and place them on a oiled baking dish or rack (if you are using your air fryer)
  • Brush the tortillas lightly with olive oil or melted butter
  • Bake until filling is heated through and the tortillas are lightly browned in your air fryer or oven

How to Make Taquitos in an Air Fryer

To make these in the air fryer, preheat oven 400 degrees and prepare the taquitos. Spray the wired rack and place the taquitos seam side on the rack. Brush with olive oil or butter on both sides. Bake for 15 to 20 minutes or until they begin to brown all around or the edges.

How to Make Taquitos in the Oven

To make these in the oven, preheat oven 400 degrees and prepare the the taquitos. Place them seam side down in a small casserole dish. Brush with olive oil and bake for 20 minutes until they begin to brown on the edges. Flip them half in the baking so you can get an over all browning of the taquitos.

Tips and Ideas

  • Topping Ideas– I love serving these taquitos with guacamole, salsa, sour cream, and hot sauce. But feel free to add whatever toppings you.
  • You can use refried vegetarian black beans instead of refried beans if you can’t find vegetarian refried beans.
  • To make it keto replace the refried beans with hummus or rice cauliflower
  • Don’t overstuff! You want the filling to stay inside the taquitos. If you overstuff, then it may not stay wrapped when you flip them. Also, the filling could run out and make a mess. Less is more.
  • Heat up your tortillas before you start rolling. If you use corn tortillas, it will SPLIT if they aren’t warm enough. Pop them in the micro for a few seconds to get them nice and steamy.
  • Spray or brush your pan/rack generously before you start rolling. You don’t want anything sticking to the pan or rack. You’re going to have to flip these over mid-way through the cooking process.
  • Add avocados before you start rolling. It adds more protein in your taquitos.

  • Veggie Mixture
  • 1 cup of chopped zucchini

  • 1/2 cup of chopped onions

  • 1 cup diced red peppers

  • 1 cup diced yellow peppers

  • 1/2 cup diced green peppers

  • 1 cup diced mushrooms

  • 2 cloves garlic, minced

  • 1 cup diced eggplant,

  • 2 plum tomatoes, diced

  • 3 tablespoons olive oil

  • 3 tablespoons homemade taco seasoning or 1 package of store bought taco seasoning

  • salt and pepper, to taste

  • Other
  • 1 can vegetarian refried beans

  • 1 cup of Mexican cheese or Vegan Cheese

  • Olive Oil, for spraying or brushing


  • Preheat the air fryer to 400° while you prepare the filling.
  • Sauté your veggies over medium heat.
  • Then, add the taco seasoning. Cook until some of the liquid has evaporated.
  • Open the can of refried beans and put in a small pan to warm it a bit. This will spread it easier on the tortilla.
  • You want each tortilla to be warm but not too hot to handle. About 30-45 seconds per 5 tortillas should work for most microwaves. Definitely don’t skip this step!
  • Create an assembly line with the refried beans, cheese, & tortillas.
  • Before you begin rolling the taquitos, generously spray the wire rack
  • Line up about 5 tortillas. First, add about 2-3 tablespoons worth of the refried beans and spread it to each tortilla. After, add about 1 tablespoon worth of cheese to each tortilla. Then, add about 2-3 tablespoons of the veggie mixture.
  • Then, starting with the bottom part of the tortilla, wrap it over the filling snuggly. Then roll upwards. Place finished taquito on the wired rack. Continue on with the remaining. Placing each one next to the other until you have a filled it of taquitos.
  • Finally, use your cooking spray (or brush the olive oil) to generously coat the tops and sides of the taquitos. This will help the tops get crispy.
  • Bake for 15 to 20 minutes. Bottoms will begin to crisp nicely. (If not, then cook for 5 minutes longer). Once bottoms are crispy, then flip each taquito over to brown the tops. Cook for 10-15 minutes until golden brown.
  • Let cool for a few minutes & serve with your favorite salsas or guac!
