Ingredients

  • 2 zucchini’s, shredded

  • 1 small onion, diced

  • 2 bell peppers (I used yellow and orange), diced

  • 1/4 cup shredded cabbage (regular or red)

  • 1/4 cup shredded carrots

  • 1/4 cup olive oil

  • 1/4 cup apple cider vinegar

  • 1/8 cup red vinegar

  • 1/8 cup balsamic vinegar

  • 1/3 cup sweetener like monk juice sweetener

  • Salt and Pepper

  • Large mason jar- boil it in water before canning it

Directions

  • In a large bowl, shred the zucchini, cabbage and carrots.
  • Dice the veggies and add the rest of the ingredients .
  • Stir it well
  • Put into the mason jar and refrigerate. It good for 3 months
