I’ll admit it, I absolutely love having leftovers. So much so, that I’ll purposefully cook a little extra sometime so I have ready-made food in the fridge. If you have cooked turkey or rice, this leftover turkey soup recipe is the perfect combination for those ingredients. This soup is loaded with healthy onions, carrots, italian seasoning, celery, garlic, and of course a little fresh lemon for loads of flavor.  This is a fantastic comfort food recipe to make with Thanksgiving Leftovers!

The best thing about this recipe you can omit the rice and add pasta instead. The pasta can gluten free or regular, its your choice. To make this low carb, omit the rice and add cauliflower and spinach. It will be amazing in anyway you make it.

How to make the Turkey Soup

  1. Soften onion and minced garlic in olive oil.
  2. Add veggies, turkey, turkey or chicken broth, water and herbs and simmer a few minutes.
  3. Add rice and cook until tender.
  4. Serve.

How To Thicken Soup

Broth based soups like this soup generally aren’t thickened. I add a tiny bit of xanthan gum to give the broth a little bit of body and the starches in the rice do an excellent job at creating a silky broth that isn’t too thick or thin.

If you prefer a thick broth soup, a quick slurry made from equal parts xanthan gum and water (Or cornstarch and water) will do the trick. Whisk it into the soup, being careful not to change the flavor of the light broth. Remember to let it boil a minute or two with the slurry to get rid of any starchy flavor!

Ingredients

  • 6 cups turkey or chicken broth

  • 2 cups water

  • 1/4 cup onion, minced

  • 1 1/2 cups shredded turkey

  • 1/2 cup green beans (optional)

  • 1/2 cup corn (optional)

  • 1 cup carrots, diced

  • 1 cup celery, chopped

  • 1 cup uncooked rice

  • salt and pepper to taste

  • 1 tablespoon Italian seasoning

  • 1/2 teaspoon oregano

Directions

  • Soften onion and minced garlic in olive oil.
  • Add veggies, turkey, turkey or chicken broth, water and herbs; cover and simmer for 20 minutes
  • Add rice and cook until tender.
  • Serve.

Notes

  • I added green beans and corn. It was leftovers from Thanksgiving
