Turkey Day Leftover Recipes- Potato Cakes

Thanksgiving celebration is a fun holiday where you meet and chat with your family members and friends and there’s an abundance of food on the Thanksgiving table that makes you all so happy and you really enjoy the moment. But after the give thanks and cheers, you wake up to encounter many containers full of leftover foods or more precisely leftover turkey.

WHAT YOU NEED TO MAKE THE LOADED MASHED POTATO CAKES:

These mashed potato cakes are so simple to make. Just grab a few ingredients:

  • Leftover mashed potatoes
  • Breadcrumbs
  • Shredded cheese- cheddar was used for this recipe; but feel free to use what you have on hand.
  • eggs
  • seasonings (garlic powder, onion powder. paprika, salt, pepper, parsley)
  • Oil to fry the potato cakes

STEPS ON HOW TO MAKE MASHED POTATO CAKES:

  • Add all the ingredients, except oil, to the bowl and mix (it will be sticky).
  • Clean pan, then melt 3-4 tablespoons butter or oil (of your choice) over medium heat.
  • Scoop ¼ cup potato mixture and form into a ball. Flatten out until it’s about ½” to ¾” thick, dip in gluten free breadcrumbs. Place it in the hot pan, and fry 3 minutes on each side, until golden.
  • Keep warm until ready to serve. For best results, serve immediately while still crispy.

HOW TO STORE AND REHEAT LEFTOVERS:

If you happen to have any leftovers, place them in an air tight container and place them in the refrigerator for up to 4 days. To reheat, remove them from the refrigerate and place them in the microwave for 30 seconds.

An alternative method to reheating is to use the air fryer. Place the potato cake in the air fryer and put it on the reheat mode for five minutes.

  • 3 cups cold mashed potatoes

  • 1 cup shredded cheese such as cheddar

  • 1/2 cup all-purpose flour or gluten free flour

  • 1 egg

  • 2 tablespoons fresh parsley chopped (or 1 tablespoon dried parsley)

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon paprika

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • Breadcrumbs for coating the potato cakes

  • Avocado or vegetable oil for frying

Directions

  • Add all the ingredients, except oil, to the bowl and mix (it will be sticky).

Notes

  • You can add 1/4 cup shredded bacon and 2 tablespoons green onions to give it a different taste
  • You can use dairy free butter to make this dairy free
  • You can use vegan cheddar to make this vegan
