Sweet Pepper and Spinach Chicken

This plate was a combination of what I can make for dinner and use leftover sweet pepper relish I made the other day. All I can say it was a check plus to make again for the family and so easy to make under 35 minutes.

Head over to to make the sweet pepper relish HERE and the rest is pretty much assembly it all together and put it in the oven till the cheese melts.

Prep before you start this recipe is a great to make this under 30 minutes and on the table for your family especially when you are busy in the summer. Less time near the oven and more time with your family. Cut the chicken breasts in half and season them with salt, pepper, garlic and onion powder. Warm up pan with olive oil and fry the chicken until its cooked. Set aside and sauté the sweet relish. Add the spinach and cook through. Grab a deep dish pan, add chicken breasts and pour the sweet relish and spinach on top. Sprinkle shredded mozzarella cheese on top. Bake for 15 minutes or until cheese is melted.

To make this dairy free, omit the cheese in this recipe. You can omit putting in the oven too. Just add the chicken back into the pan with the sweet peppers and spinach and mix it all together. Just let is simmer for 10 minutes and ready to serve it with a side salad, rice or any side dish you love.

A yummy and sweet dinner that the family will love

Ingredients

  • Sweet Pepper
  • 2 large red peppers, diced

  • 2 large yellow peppers, diced

  • 1 large orange pepper, diced

  • 4 Tablespoons fresh chopped parsley

  • 1/8 cup olive oil

  • 1 large red onion, peeled and thinly sliced

  • 3 cloves of fresh garlic, minced

  • 3 Tablespoons balsamic vinegar

  • 2 Tablespoons brown sugar alternative

  • 1 teaspoon Smoked Sweet Paprika

  • 1 teaspoon fresh Ground Black Pepper

  • Just a pinch of Sea Salt

  • 4-6 sliced chicken breasts

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • pinch of pepper and salt

  • 2 cups of spinach

  • 1 cup of shredded thin mozzarella cheese or shredded parmesan cheese

Directions

  • Sweet Pepper and Spinach
  • In a medium skillet or saute pan, heat olive oil to medium high heat and add onions, cooking until soft and translucent
  • Add garlic and continue to cook for another minute or two until garlic starts to become fragrant (watch garlic closely so that it does not burn)
  • Add the diced peppers and continue to cook for another 2-3 minutes.
  • Add about 3 Tablespoons of water to the peppers and then add balsamic vinegar, sugar, Smoked Sweet Paprika, Ground Black Pepper and Salt to the roasted pepper mixture.
  • Add 2 cups of spinach to the sweet pepper mixture
  • Heat to a boil, reduce heat and simmer 15-20 minutes

  • Preheat oven at 365 degrees
  • In a pan, add oil and season chicken with garlic, onion, salt and pepper
  • Cook till pink is gone.
  • In a deep dish, add chicken, pour the sweet relish and spinach and add the mozzarella cheese to it
  • Bake for 15 minutes or until the cheese is melted
