Ingredients

  • 1 cup cauliflower rice

  • 1/4 cup of vegetable stock (or chicken stock if you have that instead)

  • 1/2 teaspoon of garlic powder and onion powder

  • Pepper to taste

  • 1/4 teaspoon saffron or Sazon mixture

  • 1 tablespoon cilantro

Directions

  • In a small pot, add all the ingredients except for the last two
  • Simmer for 10 minutes and then add the two ingredients into the pot. Stir well
  • Simmer for another 5 min and let it stand for 10 minutes. Drain and serve

Notes

  • I added 1 tablespoon of butter for a buttery taste. You can use any substitute for this but its optional
  • This is simple and quick. My other version I added red, yellow and range peppers plus other stuff like shallots, cumin, smoked paprika and tomato paste
