Peppered Maple Bacon Roll ups

Never has bacon been prettier to present. Look at these lovely roll ups covered with maple syrup. Just a simple fold with seasoning and you get unbelievable snack for any occasion.

What you need

  • Bacon: The bacon you will use equates to 16 slices, or about a pound of bacon. I don’t recommend using thick cut bacon, it’ll result in a chewier texture and you won’t get the crispy effect. Fold the back 2 or 3 times leaving the end down on the tray.
  • Brown Sugar Erythritol: you’ll want to lightly pack your brown sugar erythritol as not to overpower the sweet to salty ratio. I like this brand, but you can use any 1:1 keto brown sugar sweetener (or even regular brown sugar if you’re not worried about the carbs).
  • Sugar Free Maple Syrup (or honey): finding a sugar free maple syrup can be tricky — you want something that matches the flavor, but doesn’t have a lot of gunk. My favorite sugar free maple syrup is Choc Zero. I also use Lakanto Sugar Free Maple Syrup; it’s still a bit thinner than regular maple syrup, but the flavor is spot on.

Recipe Tips and Variations

  • Storage: store leftovers in an airtight container in the fridge for up to 3 weeks. You can also store in the freezer up to 6 months (if it lasts that long).
  • Reheating: reheat the bacon in an air fryer or oven for 2-3 minutes at 350°F.
  • Make it everything: make Everything Bagel Roll Up Bacon! Omit the black pepper, and adding 2 teaspoons of Everything Bagel Seasoning.
  • Spice it up: Add ½ teaspoon smoked paprika to add a nice smoky flavor. It complements the sweetness of the brown sugar erythritol and the saltiness of the bacon perfectly.
  • Bake it in the oven: Put it on a tray with no parchment paper but oil it up a little. Preheat the oven at 375 degrees and bake it for 30 to 35 minutes. Turn the bacon roll ups after 15 minutes.

Ingredients

  • 1 pound bacon

  • ¼ cup maple syrup or honey

  • ¼ cup substitute brown sugar

  • coarse freshly cracked black peppercorns

Directions

  • If the bacon is long, cut in half or leave it the way it is. Fold them 2 or 3 times. Place on baking sheet.
  • Combine the maple syrup and brown sugar in a bowl. Brush each knot generously with this mixture and sprinkle generously with freshly cracked black pepper.
  • Pre-heat the air fryer to 400ºF.
  • Air-fry the bacon roll ups in batches if you need too. Place one layer of the bacon the air fryer basket and air-fry for 10 minutes. Turn the bacon knots over and air-fry for an additional 5 minutes. (Cook an additional 1-2 minutes if using thick cut bacon.)
  • Serve warm.

Notes

  • No Air Fryer? Preheat oven 375 degrees and bale for 30 to 35 minutes
