Mini Sausage Stuffers with brown sugar (no cheese)

I went the grocery store on Thursday and I was cleaning up my freezer and refrigerator like I always do. I saw that I had small sausage links, 1/2 package of bacon and half a bag of cheese sticks. I was thinking of what I can do with this as a low carb, keto and gluten free dish that can be used at breakfast, lunch, dinner or even as an appetizer.

I created mini sausage stuffers and came out great and tastes really good. If you are not crazy about sausages , you can use chicken or turkey sausages for this recipe. I used a combination of sharp cheddar and shredded mozzarella cheese.

Before you start the layering, you want to cut a slit in the middle of the sausage but not all the way through because it going to hold the cheese stick. If you sausages are small like mine, cut one the cheese sticks in half and then half again. It will give you 4 pieces with each stick.

After cutting the sausage and cheese insert the cheese in the sausage

I had the bacon precut from another recipe I did. I had to wrap 2 pieces for each sausage. Keep your bacon just as it so you can wrap it easier than what I had to do

After wrapping the sausages add your seasoning and substitute brown sugar. If you don’t want to add more cheese than add more brown sugar and half a stick of melted butter on top before you put in the oven.

Spread the shredded cheese on top and put it in the at 375 for about 20-25 minutes.

To make this dairy free remove the cheese stick and add pimentos or red peppers and onion in the middle. Sauté them first before you insert then in the sausage. Omit the cheese and just use the brown sugar or use dairy free cheese if you like.

This is a great way to use items in your refrigerator especially as appetizers. The family loved it!

A great appetizer for a party, sport event or just hanging out in front of the TV with family and friends


  • 1 package small sausages

  • 4-5 cheese sticks

  • 1/2 pound bacon

  • 1 cup shredded cheddar cheese

  • 1 cup shredded mozzarella cheese

  • 1/4 tsp. Italian seasoning

  • 1/8 tsp. paprika

  • 1/8 tsp. pepper

  • 1/2 stick unsalted butter, melted

  • 1/4 cup brown sugar alternative


  • Preheat oven 375
  • Grab a 8×8 pan and spray it
  • Cut sausages in the middle but not all the way through.
  • Cut up your cheese sticks to make 4 pieces each; Insert each little piece into the sausage.
  • Wrap the sausage with one strip of back to cover it completely
  • Melt the butter and add all the seasonings; mix well.
  • Pour over the stuffed sausages and than sprinkle the brown sugar on top
  • Sprinkle the cheese in tip until its completely covered.
  • Bake 20 to 25 minutes
