Low Carb Cauliflower Dirty Rice

Ingredients

  • 1 cup ground meat (optional)*

  • 1 cup cauliflower rice

  • 1 small onion, diced

  • 1/4 cup scallions, diced

  • 2 celery sticks, diced

  • 1/2 cup mixture of peppers, diced

  • 2 garlic cloves, minced

  • 2 tablespoons olive oil

  • 4 mushrooms, diced

  • 2 tablespoons creole seasoning

  • Pinch of nutmeg

  • Pinch of pepper flakes

Directions

  • Cook your ground meat in a pan with a little olive oil. Cook and set aside the meat. Leave the pan with beef drippings
  • Add olive oil, garlic and onions to the pan. Saute for a few minutes.
  • Add the rest of the ingredients except the spices till the veggies are cooked.
  • Add your cooked cauliflower rice and ground meat in pan. Stir well.
  • Combine all your seasonings together and sprinkle over the mixture and add a little more olive oil if needed.
  • Stir for another 10 minutes and ready to serve

Notes

  • *You can use a meat substitute or minced sausages if you don’t want to use ground meat
