Ingredients

  • 2 ½ cups of almond flour

  • ½ cup monk fruit sweetener or any other sweetener

  • 1 ½ teaspoon baking powder

  • ¼ teaspoon sea salt

  • ⅓ cup coconut oil or butter

  • ⅓ cup unsweetened almond milk

  • 3 large eggs

  • ½ teaspoon vanilla extract

  • ¾ cups blueberries

Directions

  • Preheat 350 Degrees. Line muffin pan with liners if you like but I didn’t
  • In a large bowl, stir in the dry ingredients. Mix in the butter or coconut oil into the dry mixture
  • Add the rest of the wet ingredients and mix well. Fold in the blueberries to the mixture
  • Distribute the batter evenly among the muffin cups. Bake 20 to 25 minutes
