The lemon squares are just the right treat to go with your coffee or tea

Ingredients

  • 1/2 cup of butter

  • 1 3/4 cups of almond flour

  • 1 cup of powdered erythritol

  • 3 lemons

  • 3 eggs

  • Lemon zest

  • Pinch of salt

Directions

  • Melt butter and then combine 1 cup of almond flour and 1/4 cup of powdered erythritol and a punch of salt. Press evenly into a 8×8 pan lined with parchment paper.
  • Bake for 20 minutes at 350
  • Cool for 10 minutes
  • In a mixing bowl add zest of lemon, lemon juice of 3 lemons, add the eggs, 3/4 cups of almond flower , 3/4 cups of powdered erythritol and pinch of salt.
  • Pour the filling onto the crust. Bake for another 20 minutes at 350.
  • Let it cool for 30 minutes then sprinkle powdered erythritol on top
