I love cornbread but keto and gluten free lifestyle does not go well with it. I know that I can make with the cornmeal but trying to low carb it was not going to work for me. I searched and searched different recipes through the internet but I didn’t the right one for me. It was literally 3 months and I finally got it right. The family just loves it! I have made the recipe dairy free and vegan. I will be posting 3 different cornbread recipes and I hope you try one the cornbread recipes.

A great yummy cornbread recipe that is keto and glute free

Ingredients

  • 2 cups almond flour

  • 1/3 cups powered erythritol

  • 2 teaspoons baking powder

  • 1 teaspoon salt

  • 4 eggs

  • 5 tablespoons of butter, melted

  • ½ cup of sour cream

  • 2 tablespoons of no sugar maple syrup

  • 1 tablespoon of sweet corn extract

Directions

  • Preheat oven 400
  • Combine your try ingredients then add your wet ingredients after
  • Stir everything well and pour into a greased 10’ iron skillet or loaf pan
  • Bake for 25 to 30 minutes

Notes

  • Cornbread muffins-bake only for 15 minutes
