Keto/GF: Cauliflower Mac and Cheese

I don’t eat pasta very much even if its gluten free pasta. I really wanted something hearty to go with dinner. I have before made the dairy free mac and cheese so I used the same ingredients but instead of pasta, I replaced it with cauliflower. It came our great and I will be doing a lot more in the near future.

Ingredients

  • A bag of frozen cauliflower or a head of cauliflower, cut into florets

  • 1 cup of heavy cream

  • ½ cup almond milk

  • 4 oz cream cheese

  • 1/4 cup parmesan cheese

  • 1 cup of mozzarella cheese

  • 1 cup cheddar cheese

  • ¼ tsp pepper and salt

  • ¼ tsp cayenne pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ¼ cup nutritional yeast

  • 1 tsp dijon mustard

  • ½ cup of keto or GF breadcrumbs (optional)

Directions

  • Preheat oven 375
  • Boil the cauliflower in water and add some salt to the water, boil until tender
  • Drain the water and reserve about ½ cup of the cauliflower water
  • Add all the ingredients in the bowl with about ¼ cup of the reserved water
  • Mix till it’s well combined then add the cauliflower into the mixture
  • Stir it for another 10 minutes
  • Pour the mixture onto a baking dish and add the ½ of GF homemade bread crumbs on top with a little more of the cheddar cheese
  • In the oven and bake for 35 minutes or till the cheese is melted

Notes

  • You can use dairy free cheese as substitute , more almond milk and use Xanthan gum to thicken the sauce and more nutritional yeast
