Jicama Hash Browns

I miss hash browns especially from McDonalds. Now this is no way it will taste like it but it definitely not bad at all and very yummy even my son liked them.

What is Jicama?

Jicama is a great veggie if you’re on a low-carb diet. It’s one of the best sources of dietary fiber out there and it’s a great source vitamins. Also, it’s jam-packed with important minerals like magnesium, copper and iron.

There are so many different ways to enjoy Jicama; it has become my go-to vegetable. For example, you can chop one up into slices and dip it into hummus. Chop it up into cubes and add it to salads. You can make Jicama chips or fries. I made some before and HERE is the link for that recipe.

With the Jicama Hash Browns, I added minced onions, garlic, seasonings, almond flour and came out so good. I made it to go with my hamburger and then ate for breakfast with 2 fried eggs. It was so good!

How to make Jicama Hash Browns

  1. Peel jicama
  2. Shred in food processor or cheese grater
  3. Place shredded jicama in a large colander, sprinkle with 1-2 tsp of salt. Mix well and allow to drain.
  4. Squeeze out as much liquid as possible (very important step)
  5. Microwave for 10 minutes. Add another 3 minutes if its still crunchy.
  6. Sauté minced onions and garlic on a pan with olive oil; drain and let it cool.
  7. In a bowl, add all the ingredients and then add the onion mixture to it. Mix well.
  8. Scoop a portion of the mixture with your hand and flatten it with your hand. You will want to squeeze the water out as much as possible.
  9. Repeat the process until you have the desired number of hash browns.
  10. Fry them up on your griddle or pan about 5 minutes on each side or until golden brown

  • ½ sweet onion Chopped

  • 1 garlic clove, minced

  • 1-2 eggs, beaten

  • 3 tbsp. gluten free flour or keto wheat flour

  • 1 tbsp. nutritional yeast

  • 1 tsp. onion powder

  • 1/2 tsp paprika

  • 1 tbsp. dried parsley

Directions
