Its the season and kids love gingerbreads cookies especially decorating them. The best is at the end when they can eat them. LOL

Ingredients

  • 2 1/2 cup almond flour

  • 1/2 cup of monk fruit sugar

  • 2 Tablespoons coconut flour

  • 1 Tablespoon ground ginger

  • 1 Tablespoon cinnamon

  • 1/2 Teaspoon pumpkin pie spice

  • 1 Teaspoon of baking powder

  • 1 Teaspoon of baking soda

  • 1 large egg

  • 2 Tablespoons of melted butter

  • 1/2 Teaspoon no sugar maple syrup

  • 1/2 teaspoon Xanthan gum

Directions

  • Put all the ingredients and mix it well
  • Roll into a ball and wrap in plastic. Set in the frig for 30 minutes
  • Preheat oven at 325
  • Roll out dough between to two parchment papers
  • Cut into shapes
  • Bake for 12 to 15 minutes
  • You can decorate them with any kind of frosting of your choice

Notes

  • You can replace the maple syrup with molasses
  • To make it vegan replace butter with vegan butter and replace the eggs with 4 tablespoons unsweetened applesauce
