Making Blackened Shrimp Skewers
These blackened shrimp skewers are nothing short of delicious, wonderfully seasoned little morsels of seafood! The trick to really great shrimp skewer? First, you want to try to get your hands on shrimp (medium to large shrimp about 2 lbs). Peel, devein the shrimp and pull the tails. These shrimp are ready to marinate. Grab a large bowl or zip lock bag, add 1 tablespoon lime juice, 2 tablespoons of olive oil, 1/3 cup of fresh parsley and the homemade blackened seasoning. Let it marinate for 15 to 30 minutes. In the meantime, submerge the skewers in cold water for 15 minutes. This will prevent them to burn at the ends while you grill them.
Skewer the shrimp and pour the rest of the marinate over the shrimp. Grill or griddle the shrimp. It needs no more than 3 minutes per side (depending on the size) and make sure not to overcook the shrimp. While cooking brush the shrimp with melted butter to make it extra juicy and delicious. Ready to serve with your favorite side dish, on a salad, on a wrap or make them into tacos.
