Ingredients
  

  • 2 cups shredded zucchini
  • 1 ½ cups gluten-free all-purpose flour blend
  • ¾ cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  • In a bowl, mix the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In another bowl, beat the eggs, oil, and vanilla extract. Stir in the shredded zucchini.
  • Add the wet ingredients to the dry ingredients, stirring just until moistened.
  • Pour the batter into the prepared loaf pan.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and Serve:
