Pasta Carbonara is one of those classic pasta dishes that is straight up comfort food. Plus, bacon. Right? For some reason I have lots of friends who are a little freaked out by the thought of putting raw eggs into the pasta. While the eggs definitely get cooked by the heat of the pasta in traditional carbonara, they still get a little worried. Then there are the friends and family with egg allergies! I decided to check other recipes and with a little testing and came up with an egg-free version of carbonara pasta so that everyone can enjoy this delicious meal at my table.

You don’t like bacon- you can omit the bacon with any meat, veggies or herbs. You can use any kind of pasta for this recipe too.

Ingredients You’ll Need for Pasta Carbonara

  • Gluten-free spaghetti (Whatever brand you prefer; they all work well. I like Shaw’s Brand Gluten Free Pasta, Barilla and Jovial!).
  • Unsalted Butter- it gives a nice buttery taste and helps bring the cheese together with the pasta.
  • Parmesan cheese (traditional carbonara calls for Pecorino Romano, but Parmesan is easier to find, and the taste is similar. You need real parmesan cheese, in a block. It just tastes so much better, but you don’t have any just use from the container)
  • Heavy Cream- It makes the recipe so creamy and tasty. You can use regular milk or non-dairy milk like cashew milk, oat milk and almond milk.
  • Garlic- I used cloves but you can use powered, just use only 1 teaspoon of it.
  • Bacon (or any kind of meat, veggies or fresh herbs)
  • Freshly ground black pepper and salt

How To Cook Gluten-Free Pasta Carbonara

You’ll brown the bacon on the stovetop while the pasta cooks. Then, you’ll use butter, parmesan cheese, heavy cream, some of the bacon fat, and a little pasta water to create the “carbonara cream”, along with some freshly ground black pepper and salt. When the pasta is done cooking, you’ll add it to the pan with the bacon fat along with some liquid, to cook for a few minutes. Then you stir in the carbonara cream mixture, the cooked bacon, and it’s done!

How to make it Vegan

  • Replace vegan bacon or use sesame (coconut, sunflower or olive) oil
  • 1 cup vegan parmesan cheese
  • 1/2 cup vegan ricotta cheese
  • 6 tablespoons plant base butter
  • 1 tablespoon minced garlic
  • reserve 1/2 cup of pasta water
  • 2 tablespoons of Nutritional yeast
  • 1 teaspoon paprika
  • salt and pepper, for taste

Ingredients
  

  • 1 pound bacon diced
  • 1 pound gluten free pasta
  • 3 tablespoons butter
  • 2 cloves garlic minced or 1 teaspoon garlic powder
  • 1/2 teaspoon salt and pepper
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon chopped fresh parsley

Instructions
 

  • Put diced bacon in a cold skillet and heat over medium-high heat. Cook bacon, stirring occasionally until crispy, about 10 minutes. Remove bacon bits from pan and grease and let drain on a paper towel lined plate.
  • Meanwhile, cook pasta according to package directions.
  • Remove most of the bacon grease from the skillet, reserving about 1 TB in the pan. Return the pan to heat and add in the butter and let melt. Add in the garlic and saute 1 minute.
  • Stir in salt and heavy cream. Pour cooked and drained spaghetti noodles into the skillet and toss to coat. Stir in parmesan cheese.
  • Serve hot topped with crisp bacon and parsley to garnish.
