This easy GF Buffalo Chicken Mac and Cheese recipe is made with chicken tenders and gf pasta to the most amazing creamy, cheesy sauce, filled with two cheeses, buffalo sauce and spices!

Now I have seen a lot of recipes using shredded chicken and you can definitely do this when you want to make it a quick one, but my family loves the friend chicken strips and tossed in the buffalo sauce before adding to the mac and cheese. However, you want to make it, it will be amazing.

Ingredients

  • Chicken Tenders – I took 3 chicken breasts (cut them up, dipped in egg and then dipped in gf breadcrumbs) and fry them up. Or you can boil, or pressure cook 1 pound of boneless, skinless chicken breasts, then shred the chicken. You can also use shredded rotisserie chicken.
  • Buffalo Sauce – I like to use Sweet Baby Rays, but any brand of buffalo sauce will work!
  • Pasta Water – this is only needed if you make your own mac and cheese. If you buy the already made mac and cheese than you will need 1 cup of chicken stock or broth.
  • Paprika
  • Garlic Powder
  • Black Pepper
  • Salt
  • Gluten Free Pasta– I used Shaw’s GF macaroni shells to make my mac and cheese but you can ready-made ones from the grocery store.

How To Make Homemade Mac and Cheese

For those who need food on the table less than 30 minutes, grab boxed or frozen mac and cheese from the grocery store or your restaurant.

Step by Step for This Recipe

  • Make your mac and cheese the way you like it – homemade, frozen or boxed.
  • Cut up the chicken breast into tenders, coat then with egg and breadcrumbs, fry or bake the chicken tenders. pour 1/4 cup of the buffalo sauce over the chicken and cover them completely.
  • Fold in the macaroni and 1/4 cup of the buffalo sauce until homogenous. Make sure that the pasta is evenly coated in cheese and sauce.
  • Add the chicken to the mac and cheese.
  • You can add panko or plain gluten free breadcrumbs on top.
  • Preheat the oven to 350 degrees and bake for 20 minutes or can just serve and enjoy!

Substitutions and Additions

  • Add Spice – If you want to really up the spice level of this dish, add an extra drizzle of buffalo sauce to the top of the dish when serving. You can also add a few drops of tobacco sauce or hot sauce to the cheese sauce when you make the mac and cheese,
  • Change the Noodles – We like the macaroni shells, but you use what you have. We think a bowtie pasta would be good to use.
  • Change the Cheese – We used cheddar cheese and mozzarella cheese, but you can easily use pepper jack cheese or Colby Monterey cheese for added flavor. You can also melt cream cheese for added creaminess.
  • Add your favorite toppings – We like to top with breadcrumbs, but sour cream would also be delicious.
  • Dressing – Feel free to add blue cheese dressing for a hint of ranch flavor to the mac and cheese.
