Garlic Mashed Potatoes

Ingredients
  

  • 2 pounds Yukon Gold potatoes peeled and quartered.
  • 1 head garlic
  • 1 tablespoon olive oil
  • ¾ cup heavy cream
  • 4 tablespoons unsalted butter
  • Salt and pepper to taste
  • Fresh chives chopped for garnish.

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Cut the top off the head of garlic to expose the cloves. Drizzle with olive oil, wrap in foil, and roast in the oven for 30-35 minutes until golden and soft.
