Ingredients

  • 1 1/2 cups of flour or gluten free*

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1/2 tsp baking soda

  • 1 tsp cinnamon

  • 1/4 tsp nutmeg

  • 2 eggs

  • 1/2 cup coconut oil

  • 1 1/4 cups shredded zucchini

  • 1/2 cup monk fruit sugar

  • 1/2 cup brown sugar substitute

  • 1 tsp vanilla extract

  • 1 cup lily’s dark chocolate

  • 1/4 walnuts (optional)

Directions

  • Preheat oven 350
  • In a bowl add your dry ingredients and mix well; set aside
  • In another bowl, put all your wet ingredients and mix well
  • Slowly add the wet ingredients into the dry ingredients; mix well
  • Then add the zucchini to the mixture
  • Incorporate the chocolate ships and stir with a spatula
  • Pour onto a bread pan that has been covered with parchments paper so it wont stick
  • Bake for 1 hour

Notes

  • If you use GF flour also add 1 teaspoon xanthan gum
