These roasted potatoes and carrots always make a great side dish at any meal and these are wonderful.

There are two ways you can make this recipe. It will based on time you have to get dinner on the table. The first way is boiling the potatoes and carrots in water till the fork goes through it, toss it in the cajun seasoning with olive and roast it for 20 minutes. The second way is to toss the vegetables in olive oil and the seasoning, put veggies in a deep dish and bake in the oven for 40 minutes. Its up to you but no matter what you decide to make, it will be delicious at the end.

Expert Tip: Use a rimmed roasting pan and don’t overcrowd the pan. Overcrowding can cause the potatoes and carrots to steam and they won’t crisp. No one wants soggy veggies!

  • Roasting potatoes at a higher temperature will ensure crispy potatoes ( 425 degrees for 40 minutes and turning them after 20 minutes if not pre-boiled) with tender and fluffy interior.
  • For really easy clean-up, use parchment paper on the baking sheet and spray the paper with the non-stick spray.
  • Peeling the potatoes is not necessary. Wash the potato skin well before cutting potatoes into even size chunks.
  • If you boil the veggies, don’t over boil but enough that you are able to pierce it through with a knife.
  • Make evenly cut pieces of potato and carrots, so they roast at the same rate.
  • Feel free to make ahead and reheat at 375°F wrapped in aluminum foil for about 10 minutes.
  • It is extremely important to soak the potatoes to ensure crispy potatoes.
  • Also very important to completely dry the potatoes and carrots before seasoning. We use a cotton towel to dry them.

Ingredients

  • 2 pounds baby red potatoes, washed and cut into 1 inch cubes

  • 4 Tablespoons olive oil

  • 1/2 teaspoon paprika

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon cayanne seasoning

  • 1 tablespoon dried oregano or thyme

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon ground black pepper

  • 3 teaspoon dried parsley

  • non-stick olive oil spray

Directions

  • Pre-boiling the potatoes and carrots
  • Cut the potatoes in half or if you larger potatoes, cube them. Let them cook for 20 minutes or until the fork/knife can go through it.
  • Whisk together the oil, Cajun seasoning, thyme or oregano, salt and black pepper in a bowl. Set aside
  • Toss the potatoes and carrots in the oil and spread on a baking sheet.
  • Preheat the oven at 425 and roast for 2o minutes
  • Roasting the potatoes and carrots (no pre boiling)
  • Whisk together the oil, Cajun seasoning, thyme or oregano, salt and black pepper in a bowl. Set aside
  • Toss the veggies in the oil and spread on a baking sheet
  • Bake in preheated 425 degree oven for 40 minutes or until done in centers turning several times.
