I love using butcher paper from smoking and grilling because its can be used in high density in heat, durable to tear resistance and gives off a smoky taste to the meats. The only cons I have on this is not suitable for wet foods and not grease proof.
The parchment paper is amazing for cooking and baking. I used it over and over again lining my baking sheets. The paper eliminates sticking plus its heat and grease resistant. The only con I have on this that the bleached parchment paper contains toxic dioxin.
There is nothing to mess up between the accurate use of the paper if you once understand it well. You will need to figure out when and how the use of each paper. It will depend on your needs and how you will be using it.
