If you love good chicken stir fry, you’re going to love this easy bourbon chicken. This recipe features boneless chicken thighs covered in a sweet sauce and is absolutely addicting! Serve over rice or stir fried veggies.

Ingredients for the bourbon chicken

This has a long list of ingredients, but don’t be scared off! Once you have everything it does together in 30 minutes.

  • 3 pounds boneless chicken thighs
  • 1 teaspoon salt and pepper
  • 4 tablespoons sesame oil
  • 4 cloves garlic
  • 1/2 cup chicken stock
  • 2/3 cups gluten free soy sauce or liquid amino acids
  • 1/3 cup apple sauce
  • 1/4 cup bourbon
  • 1/3 cup ketchup
  • 2 tablespoons apple cider vinegar
  • 1 cup brown sugar
  • 1 teaspoon ground ginger
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon crushed red pepper
  • 1 tablespoon cornstarch with 2 tablespoons of water or xanthan gum with water

I know its a lot but its really not so bad. And its so worth it at the end.

How to make bourbon chicken

This bourbon chicken recipe is super easy and has three steps: browning the chicken, simmering the sauce and than put it all together.

Step One: Cut up the boneless chicken thighs into 1-inch strip pieces.

Step Two: Brown the chicken thigh pieces on both in a skillet or griddle with sesame oil. You might need to do this in two batches if you don’t have a large skillet. Make sure the oil is hot to get a nice golden brown coating instead simple steaming chicken.

Step Three: Make the bourbon sauce. Add the minced garlic and sauté for 30 seconds. Then add the rest of the ingredients and whisk the cornstarch or Xanthan gum to make sure no clumps remain. Bring the mixture to a light boil, add the chicken back in, and let the sauce simmer for another 10 minutes until the reduces to half.

If you want to make the sauce more thicker , you can whisk another additional 1/2 to 1 tablespoon cornstarch with water and add it to the pot.

How to make this without bourbon?

You can skip the bourbon by using more apple juice and a splash of Worcestershire sauce instead. You will need to cut down the sugar by 1/2 cup.

Can I cut down the sugar?

The sauce comes out amazing but you can substitute it with honey and use only 1/4 cup of the brown sugar.

I used in my recipe brown sugar substitute and it was delicious and less sugar if want this recipe to be keto, and no sugar.
