Avocado Cucumber Shrimp Appetizer

Avocado Cucumber Shrimp Appetizer

Plump shrimp coated with Creole seasoning are quickly sautéed and nestled into a satisfying avocado mash sauce slathered onto crisp (low carb) cucumber slices, drizzled with lime juice and topped with cilantro. Seriously, your taste buds will thank me when you bite into one of these delicious appetizers.

It seems like a lifetime ago when I made these for a dinner party for my family. Even though it was only a month ago, that actually is a lifetime in COVID-19 terms. But after seeing a steady stream of family friendly comfort food recipes, I decided the world (and our taste buds) needed this recipe again.

BLACKENED SHRIMP CUCUMBER BITE TIPS

  • Purchase a Cajun seasoning blend to keep things super easy or you can make your own Cajun Seasoning or you can use taco seasoning blend and here that recipe to make your own Taco Seasoning
  • You can also substitute and purchase guacamole for the avocado mash. But the avocado mash is quite easy to whip up and I prefer its thicker consistency.
  • If you don’t like shrimp you can make substitute with chicken, turkey, beef or even pork.
  • To make this vegan/vegetarian. replace the shrimp and add mango, pineapple or sautéed sweet potato to these appetizers
  • Use toasted baguette (regular, gluten free or low carb) slices instead of cucumbers for a heartier appetizer.

STEP BY STEP TO MAKE THESE APPETIZERS

  1. Toss the shrimp in the oil and the seasoning and cook in a preheated (medium-high heat) heavy bottomed pan/skillet until slightly blackened, about 2-3 minutes per side.
  2. Mix the avocado mash together with a fork or a blender by pulsating till well mixed
  3. Cut the cucumbers into slices
  4. Top cucumber slices with avocado mash and add the shrimp on top
  5. Squeeze a little lime juice on each one
  6. Sprinkle with chopped cilantro or parsley if desired

Ingredients

  • Shrimp Cucumber Bites
  • 1 tablespoon oil

  • 1 tablespoon creole or taco seasoning

  • 1 pound shrimp peeled and deveined (I used 16-20 shrimp per lb size)

  • 1 cucumber sliced

  • chopped parsley or cilantro, optional, for garnish

  • Avocado Mash
  • 1 large avocado (or 2 small) mashed

  • 1 green onion thinly sliced or chopped

  • 2 tablespoons cilantro and/or parsley chopped

  • 1 tablespoon lemon juice

  • 1/4 cup salsa

  • salt and cayenne to taste

Directions

  • Shrimp Avocado Bites

  • Top cucumber slices with avocado mash and shrimp then drizzle with remoulade sauce. Sprinkle with chopped parsley if desired.
