A healthy chicken salad with red pepper, avocado, onions, tomatoes, carrots and red cabbage is one of my favorites! This chicken salad is made with mayo, Rotisserie chicken and veggies. It’s perfect to serve on salads, croissants, and much more! 

Ingredients for the Chicken Salad

You are going to need a few ingredients to make this amazing chicken salad:

  • Red Peppers
  • Rotisserie Chicken – if you don’t like or have access to a leftover Rotisserie chicken, cook or grill 2 seasoned chicken breasts, or use canned chicken as a last (but easy!) resort
  • Mayo 
  • Apple Cider
  • Avocado
  • Red Onions
  • Shredded Carrots
  • Shredded Red Cabbage
  • Tomatoes
  • Salt and pepper – to taste
  • Dried or Fresh Parsley
  • OPTIONAL – Everything bagel topping, apples, dried cranberries, red grapes, toasted pecans, toasted pine nuts, and slivered almonds are a favorite to add when I am eating this on a bed of lettuce.

How to Make Chicken Salad

Chop: Chop the veggies or shred the carrots

MIX:  In a medium bowl mix all the ingredients

COMBINE: In a separate bowl combine mayo, apple cider and seasoning together. Mix well.

ADD: Combine chicken mixture with mayo mixture and stir well until mixed well. Add salt and black pepper to taste.

SERVE:  Serve immediately.

How do you store Chicken Salad?

You can store chicken salad in an airtight container in the refrigerator for up to 3 days. I love to make extra servings of this recipe and serve it up differently for each of my leftovers.

Ingredients

  • 1 red pepper, diced

  • 1 cup rotisserie chicken

  • 1-2 tablespoons mayo 

  • 1-2 teaspoons apple cider

  • 1 ripped avocado. diced

  • 1/3 cup red onions, diced

  • 1/4 cup shredded carrots

  • 1/4 cup shredded red cabbage

  • 1/2 cup small tomatoes, diced

  • Salt and pepper – to taste

  • 1 teaspoon dried parsley

  • OPTIONAL – Everything bagel topping, apples, dried cranberries, red grapes, toasted pecans, toasted pine nuts, and slivered almonds are a favorite to add when I am eating this on a bed of lettuce.

Directions

  • Serve in a lettuce wrap, low carb tortilla, or with a fork!
